Chicken dum biryani is a classic South Asian rice dish that is traditionally made with aromatic basmati rice and marinated chicken pieces that are cooked together with a blend of fragrant spices and herbs. Here’s a simple recipe to make chicken dum biryani at home:

  • 2 cups basmati rice
  • 500g boneless chicken pieces
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala powder
  • 2 tbsp biryani masala powder
  • 2 tbsp chopped mint leaves
  • 2 tbsp chopped coriander leaves
  • 1 large onion, sliced
  • 2-3 green chilies, sliced
  • 4-5 tbsp vegetable oil
  • Salt to taste
  • Water as needed

  1. In a bowl, mix the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, biryani masala powder, mint leaves, coriander leaves, and salt.
  2. Heat oil in a large pot and fry the sliced onions until they are golden brown.
  3. Add the marinated chicken to the remaining onions in the pot and cook for 10-15 minutes on medium heat.
  4. Add water as needed and let it cook until the chicken is tender and the gravy has thickened.
  5. In another pot, bring water to a boil and add the soaked rice.
  6. Layer the cooked chicken and gravy over the rice. Sprinkle the fried onions and sliced green chilies on top.
  7. This will allow the flavors to meld together and the rice to absorb the flavors of the chicken and spices.
  8. Serve hot with raita and salad.
